Horchata de chufa is a uniquely Valencian drink with no true equivalent anywhere else in the world, made from tiger nuts (chufas) -- small, wrinkled tubers that grow in the sandy soils north of Valencia, primarily in the town of Alboraya. This naturally sweet, creamy, dairy-free beverage has been refreshing Valencians since the Moors introduced chufa cultivation to the region over 1,000 years ago. Served ice-cold in the sweltering Valencian summer, horchata has a subtle, complex flavor that is simultaneously nutty, earthy, and sweet, with a silky texture that makes it one of the most refreshing drinks on the Mediterranean.
