Pan con Tomate
Pan con tomate (pa amb tomàquet in Catalan) is the ultimate expression of the Mediterranean philosophy that great food requires nothing more than a few perfect ingredients treated with respect. A slice of rustic bread is toasted or grilled, rubbed with a cut clove of garlic, then halved ripe tomatoes are pressed and rubbed across the surface until the bread absorbs their pulp and juice. A generous drizzle of fruity extra virgin olive oil and a pinch of flaky salt complete what is arguably the most satisfying simple food in all of Spain. It appears at virtually every meal in Catalonia, from breakfast to dinner.
